Capocollo / Capicola - Day 2: Rinse, Spicing & Hanging
Capocollo, Capicola or Gabagool... no matter how you pronounce it, this dried cured meat is delicious.
After 24 hours, we reconvene in Giovanni’s basement to rinse off the “jewels“ and get the seasoned and prepped for hanging. For reference, we filmed this on Friday 12/29/2018 at 11 AM.
