1 portion of frozen udon noodles
2 shiitake mushrooms
A little piece of ginger
1 spring onion
80g veg mince
1/2 tablespoon vegetable oil
1 tablespoon red miso paste
2 tablespoons sake
2 teaspoons soy sauce
1 teaspoon sugar
100ml water
1 teaspoon cornflour or potato starch 2 teaspoons water
1/2 teaspoon sesame oil
Some coriander for garish
A pinch of chilli flakes
