Stuffed dormice - An Ancient Roman recipe

For my first culinary history video I have chosen a famous, or maybe infamous Ancient Roman recipe: stuffed dormice. A dormouse is a little rodent that now is a protected species, but don’t worry, we will not be cooking real dormice here. You need: slices of beef, veal or pork (which will replace the actual dormice), minced meat, pepper, bay leaves, pine nuts or almonds, garum (Roman fish sauce, you can use Asian fish sauce instead) and olive oil. Stay tuned - there are much more historical dishes to come on this culinary archaeology channel. If you like, visit me at or
