thank you all so much for watching:) Song in this video: “Just Knowing You” by The National Forest cookbook: peach bars: dough: 2 1/4 cups all-purpose flour 1 cup sugar 1 cup chopped pecans 1 cup coconut oil or butter (softened) 1 large egg 1 cup oats filling 4 cups chopped fruit 2 TBSP cornstarch 1/4 cup sugar juice of 1 lemon combine all the dough ingredients EXCEPT the oats, and beat in a stand mixer for 1-2 minutes. take half the dough mixture and press it into an 9x9 inch pan. combine the filling ingredients in a separate bowl and pour over the dough. add 1 cup of oats to the remaining dough and mix until the oats are incorporated. sprinkle the oat crumble over the fruit. bake at 350 for 35-40 minutes until the top is golden
