Ingredients and Measurements:
To season the meat:
3 lb. goat meat (or beef/pork/lamb/mixture of meats) washed and chopped
1 tbsp. chopped garlic
1 tbsp. grated ginger
1 tsp. black pepper
To put the stew together:
3 cup casareep
2 tbsp. dark brown sugar
6 cloves garlic
1 habanero or 4-5 wiri wiri peppers
orange peel (from 1/2 of the orange)
1 bunch of thyme (8-10 sprigs)
water to cover the meat
oil
salt and pepper to taste
