Homemade Shirataki Noodles Recipe using Glucomannan powder Live Demo
ATTENTION: This is an OLD video. My shirataki noodles recipe and process have changed and are SUPER simple now. See this new video:
Live demo showing how to make shirataki noodles recipe at home using glucomannan powder. Very easy.
The recipe used in the video:
HOMEMADE SHIRATAKI NOODLES RECIPE
2-1/2 cups cool water
1-1/2 Tablespoons glucomannan powder (1 Tbs 1 tsp 1/2 tsp)
1 Tablespoon water
1/2 teaspoon pickling lime (calcium hydroxide / lime)
Whisk GM powder into cool water. Let set and gel for 15 minutes. Perform “spoon test“ by dragging spoon through mixture to gauge how quickly the gap closes (should close quickly).
Microwave for 3 to 4 minutes, stirring every minute or two. Temperature should reach 110 to 120 degrees Fahrenheit. After microwaving, wait until mixture cools back down to 90 to 95 degrees Fahrenheit.
Mix pickling lime and water together. Pour over cooled GM mixture and stir for about 50 to 70 strokes, just until mixed and starts to form a ball.
Put into plastic pasta press or metal potato ricer and squirt shirataki noodles into boiling water. Boil shirataki noodles 15 to 30 minutes. Drain and rinse with cold water. To store, place in bag with water. To use, remove shirataki noodles from water and “dry fry“ in hot nonstick pan until desired firmness.
***NOTE: The Glucomannan powder brand you use may or may not be stronger or weaker than the one shown in the video (Konjac Foods Glucomannan powder). If it is, you may have to experiment with the recipe’s water amount it to get your mixture to comply with the spoon test consistency (as shown in the video).
***NOTE: PLASTIC Pasta press shown in video is the Pasta Pronto Gourmet Pasta Press. It can be found on Amazon for under $10 USD.
***NOTE: Pickling lime used in video is Mrs. Wages Pickling lime. It can be found on Amazon. It might also be found in the canning sections of supermarkets and/or hardware stores.
