Maple Habanero Pork Twists
I used to bribe people with candied bacon. At my old company we would go to business events to network and find new leads, and I would always bring a small burner, 5 lbs of homemade bacon, and a bunch of maple syrup. While other companies gave out business cards, I would give out “free” candied bacon. In return, all they had to do was sign up for our newsletter. I remember at one event alone, we doubled our newsletter subscriber base just from candied bacon. EVERYONE loves candied bacon.
Whether making traditional candied bacon in a pan, or smoking it, the key is waiting until the end to add the sugar. Get the pork belly (or bacon) close to the texture you want, then add the maple syrup. Once it caramelizes, you are good to go. Feel free to get creative as well, habaneros have great flavor but can be too spicy. By cooking them down a bit, the spiciness is more reasonable but the flavor is great!
