If we tried to claim that octopus has the best texture of any sous vide food, it would definitely stir up the comments. You can’t deny though that it’s one of the best! We prefer 85ºC for 4 hours. Drop a comment below if you’re cooking octopus sous vide and what time and temp combo you’re using.
