COLD NOODLE SALAD
SERVES 4
1/4 cup soy sauce
1/4 cup honey
4 teaspoons sesame oil
1 pound soba noodles, cooked until tender, refreshed in ice water, and well drained
1/2 cup thinly sliced green onions, cut on the bias
1/2 cup bean sprouts
1/2 cup thinly sliced carrots
1/2 cup cucumber, peeled, seeded, and thinly sliced
1 cup coarsely chopped peanuts, lightly toasted
3 tablespoons chopped fresh cilantro
2 tablespoons black sesame seeds
Grilled chicken or steak, thinly sliced (optional)
In a small bowl, whisk together soy sauce, honey, and sesame oil. Transfer noodles to a large bowl. Add the soy mixture to noodles and toss gently until well coated. If it seems a little dry, add a little more soy
