Buckwheat Khichdi | Kuttu Ki Khichdi | Navratri Upvas or Breakfast Recipe by Priyanka Rattawa
Buckwheat Khichdi, a navratri upvas recipe is super healthy, delicious and easy to make. Buckwheat/Kuttu/Phaphra is gluten free, rich in fiber and higher in protein.
Ingredients-
1 cup buckwheat /kuttu /phaphra
1 potato finely chopped
1 Carrot finely chopped
1 tomato finely chopped
2.5 cups water
1 green chili, chopped
½ inch ginger grated
curry leaves
½ tsp cumin seeds/jeera
½ cup Roasted peanuts powder
1 tbsp oil
2 tbsp chopped coriander leaves
lemon juice
rock salt as required
1 tsp black pepper powder
How to make it-
1. Add water and salt in a pan and allow it to boil. Add buckwheat and cook until it is soft and the water is dried off.
oil in a pan , add the cumin and saute till they crackle.
then add the green chili , ginger,curry leaves and saute for a few seconds.
3. Add potato , carrots , salt and saute for 5 minutes. Add tomato and cook for another 5 mins.
4. Add the peanuts powder ,pepper, lime juice to the cooked buckwheat and mix well.
5. Add buckwheat mixture , stir and cover
