Arugula Salad with Strawberries (Fight Inflammation & Free Radicals) | The Frugal Chef

This arugula salad with strawberries not only delicious, it is loaded in good things for you, like antioxidants, vitamins and minerals. It is also a great salad to combat internal inflammation. I dressed it with my strawberry balsamic vinaigrette but you can definitely use any balsamic vinaigrette you prefer. Follow me : Twitter : Facebook : Instagram : TikTok: @joyouslivingbytfc Arugula Salad with Strawberries 4 cups arugula — washed and dried 1/4 of a large red onion — sliced 1/2 large avocado — diced 1/4 cup chopped pecans or walnuts (toast them for extra flavor) 10 strawberries — washed and sliced Feta or goat cheese (optional) Strawberry Balsamic Vinaigrette Place all the ingredients, except the dressing, in a bowl and toss. Add the cheese if using. Add the vinaigrette and toss to coat well. Serve immediately. This salad will not last for too long once it is dressed. FOR THE VINAIGRETTE: 3 tablespoon olive oil 1 small shallot or 1/8th of a red onion 8 strawberries — halved (don’t bother taking off the leaves) 1/4 teaspoon yellow mustard 1/4 cup balsamic vinegar 1 teaspoon pure maple syrup (optional) Salt & Pepper Place all the ingredients in a blender and blend until smooth.
