Learn how to make Avocado Chickpea Toast by Manjula
Ingredients:
4 slices of bread (preferably French bread)
1-1/2 cups boiled chickpeas
1 large or 2 small avocados
1 tablespoon finely sliced green chilies
1-1/2 teaspoons salt
2 tablespoons lime juice
2 tablespoons finely chopped cilantro
2 tablespoons balsamic glaze (or balsamic vinegar)
1/4 cup shredded radish
Method:
-Mash the boiled chickpeas in a bowl using a fork or potato masher until they are broken down.
-Add lime juice, salt, finely sliced green chilies, and chopped cilantro to the mashed chickpeas. Mix well.
-In another bowl, mash the avocado(es) until smooth. Add more salt, lime juice, and cilantro to adjust the taste.
-Toast the slices of bread until they are golden brown.
-Spread the chickpea and avocado mixture evenly over each toasted bread slice.
-Drizzle balsamic glaze over the spread on each bread slice.
