I’ve been stuck in a trap of comparison for most of my life, always trying to perform better, be better, make sure my life is exciting. People experiencing all sorts of drama, living out of a suitcase, going through many relationships - my life seemed boring in comparison. Until at some point I realised, that perhaps, this sort of “boring“ is actually healthy. Until I realised, that I don’t want drama, that I want comfort and reliable people in my life. My perspective changed - and I wanted to share it with you. Join me in this video, as I ponder about comparison, visit fairytale villages in the English countryside and paint an old thatched cottage. ____ Join my Patreon community: Buy me a coffee: ____ 🍋 Lemon Drizzle Recipe: 150g Plain white flour 150g Softened butter 125g Sugar 85g for drizzle (you can increase the amount of sugar to taste) 3 Eggs 1 tbsp vanilla 1 tsp baking powder Zest of 1 lemon Juice of 4 lemons Optional: blueberries Add 125g of sugar to a bowl, zest one lemon and rub zest with sugar together using your fingers. This will enhance a lemon flavour! Add softened butter, vanilla and cream well with a whisk. I did it manually, but if you have an automatic whisk or a blender with whisk attachment, then use it as it will be easier to cream. Once your butter sugar mixture is light and soft, add eggs one by one while continuing whisking until smooth. Then add flour and baking powder and mix with a silicone spatula until combined. Line the loaf tray with baking parchment and grease with butter. Put into a preheated oven at 180C/ 356F and bake for 35-45 minutes until golden on top and fully baked. In the meantime, juice 4 lemons. Pour through a sieve to make sure there are no seeds or pulp in the juice. Combine 85g of sugar with the juice and stir until sugar dissolves. Take the loaf out of the oven when ready, then pour the lemon sugar mixture on top right away when the loaf is hot. You can poke your loaf with a toothpick to help the juice absorb better, but that’s not necessary.
