How One of Italy’s Largest Mozzarella Producers Makes 11,000 Pounds of Cheese a Day — Vendors
Torre Lupara Dairy Farm has been making 11,000 pounds of Mozzarella di Bufala Campana a day since 1943. Helping the crew turn the milk into bouncy and creamy buffalo mozzarella is the farm’s herd of beloved buffalo, who are fed a diet of greens, corn, and hay, all grown right on the premises for complete traceability.
