I love garden inspired recipes and this is one of those recipes that hits hard all spring and summer long. Even through fall this dish works great. You can easily replace the poached eggs with some fresh mozzarella or roasted tomatoes for a nice twist, but its a stellar dish just with the pasta alone! Ingredients:
3/4 cup olive oil
1/2 cup fennel tops
1/2 cup basil leaves
1/2 cup chervil
1/4 cup cilantro
1/3 cup almonds
salt and pepper to taste
2 whole eggs
1 zucchini
