In this video, I’ll show you how easy it is to make fluffy, healthy, lactose, gluten, and sugar free carrot muffins.
Calories (per 100 g): 164
Protein-8 Fat-8 Carbohydrates-16
Ingredients for 6 pieces:
Carrot 150 g.
Eggs 4 pcs. ( 1C )
Oil 10 g (any)
Oatmeal or bran 80 g (I have ground flakes)
Psyllium 10g (or flaxseed meal)
Baking powder 7 g.
Salt 1/5 tsp
Stevia to taste (any sweetener)
Cinnamon 1.5 tsp
You can add: orange zest, crushed nuts, ground ginger, dried fruits.
1️⃣ Finely grate the carrots.
2️⃣ Lightly beat the eggs with a whisk. Add sweetener, carrots and oil (I used unrefined sunflower).
3️⃣ Separately mix all dry ingredients. Add them to the eggs and mix again.
4️⃣ Leave the dough for 10 minutes. Turn on the oven to heat up to 180°C.
5️⃣ Spread the dough into molds and put in the oven for 30-35 minutes.
6️⃣ Cover the finished cupcakes with a towel and cool completely.
