Ingredients
For this recipe, you’ll need:
1! 2 cups of Basmati rice
2! 1 pound of chicken, cut into pieces
3! 2 cups of fresh fava beans (Baghali) - if not available, frozen works too
4! 1 large onion, finely chopped
5! 4 cloves of garlic, minced
6! 1/2 cup of chopped fresh dill
7! 1/4 cup of vegetable oil
8! 1 teaspoon of turmeric powder
9! Salt and pepper to taste
[Preparation - Part 1: Rice]! Start by rinsing the Basmati rice under cold water until it runs clear. This removes excess starch and prevents the rice from becoming too sticky.
Now, soak the rice in water with a pinch of salt for about 30 minutes. While the rice is soaking, let’s move on to the chicken.
[Preparation - Part 2: Chicken]! In a large pan, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until golden brown.
Next, add the minced garlic and continue sautéing for another minute until the garlic becomes fragrant. Now, it’s time to add the chicken pieces.
Season the chicken with turmeric, salt, and pepper. Cook until the chicken is browned on all sides. This step not only flavors the chicken but also adds a beautiful color to our Baghali Polo.
[Preparation - Part 3: Baghali (Fava Beans)]! While the chicken is cooking, let’s prep the fava beans. If you’re using fresh fava beans, shell them from their pods. If you’re using frozen, no need to worry about this step.
Once the chicken is browned, add the fava beans to the pan. Mix them well with the chicken and let them cook together for a few minutes.
[Preparation - Part 4: Rice Assembly]! Now that our chicken and fava beans are ready, let’s get back to the rice. Drain the soaked rice and add it to the pot with the chicken and fava beans. Gently mix everything together.
Pour in enough water to cover the rice by about an inch. Bring it to a boil, then reduce the heat to low, cover, and let it simmer until the rice is tender and has absorbed the flavors from the chicken and beans.
[Finishing Touches]! Our Baghali Polo is almost ready! Just before serving, sprinkle the freshly chopped dill over the rice. This not only adds a burst of freshness but also enhances the overall aroma of the dish.
