Just before the start of lockdown in France, my great Georgian friend Levan came to visit us at the chateau. Aside from being an incredible professional clarinetist, he’s also the owner of a fabulous Georgian restaurant, ’Batoni Khinkali’ in Amsterdam. I persuaded him to show us how to make delicious Georgian specialities - khinkali (my favourite dumplings) and aubergine and walnut wraps.
