Roasted Italian Stuffed Peppers! Full of delicious flavour.
This recipe makes 8 stuffed peppers
8 medium sized peppers of your choice
2 cloves of minced garlic
1 medium sized of chopped onion
1 medium diced carrot
1 diced celery stick
1 cup chopped kale (optional)
1/2 cup fresh parsley
1 cup of crushed tomatoes for the filling mixture
1 1b of ground beef. You can substitute the ground beef for any ground meat you like.
2 cups of brown rice. leave the rice a bit undercooked
1 cup of shredded mozzarella cheese
1 cup of grated parmesan cheese
1/2 cup of tomato for the topping
1 tsp oregano
Salt & pepper to taste
Olive oil
You can fill these peppers with any type of filling, use white rice, quinoa, or all veggies of your choice.
Don’t over cook the filling, it will finish cooking in the oven
Finely chop ingredients it makes it easier to stuff the peppers
cook for 1 hour total time. Cover with foil for the first 30 minutes,
