▣ Ingredients:
Egg yolks 4
Egg whites 4
Unsalted butter 55g
Cake flour 70g
Vanilla extract 3g
Milk 55g
Sugar 55g
▣ Baking:155℃/311℉ ⇨ 60min
▣ Method:
1. Cook the butter until boiling, turn off the heat, add the flour and stir well.
2. Pour the batter from step 1 into a bowl, add the egg yolk, vanilla extract, milk and mix well.
3. Take out the frozen egg whites and add the sugar in three batches and whip. Beat until large hook shape can be.
4. Remove some of the egg whites and egg yolk mixture, then add all the egg whites and mix well. Pour into a square mold.
5. Bake in water bath, cool after baking.
