Ingredients ▶️5 zucchinis ▶️1 tsp salt is used to marinate the zucchinis ▶️1/3 cup all purpose flour ▶️a pinch of salt ▶️a pinch of black pepper ▶️1/3 cup scallion ▶️3 eggs ▶️1/2 tsp red chili pepper flakes ▶️serve with yogurt. Method 1. grate the zucchini in a large bowl 2. add 1 tsp of salt and marinate the zucchini about 10 minutes 3. then squeeze out the water 4. add 1/3 cup all-purpose flour, a pinch of salt, a pinch of black pepper, 1/3 cup scallion, 3 eggs, 1/2 tsp red chili pepper flakes 5. mix well 6. put 2 tbsp vegetable oil/ coconut oil in frying pan. 7. each zucchini pancake is 1/3 cup batter, put in medium heat frying pan, cook each side for about 3-4 minutes
