Mutton Paya: Ingredients 1. Trotters & Mutton – Trotters are called “Paya”. They are the feet part of an animal. They can be a bit hard to get depending on your location. Be careful to choose the trotters. They need to be tender ones, or it will take longer to cook. The same goes for meat as well. Spices – These spices dominate the list of ingredients. Green cardamom, black cardamom, cinnamon, star anise, peppercorns, and clove are used here. In addition, cumin seeds will make it more aromatic and provide nuttiness. In Indian cuisine, these spices are very much in use. Especially if it is a non-veg recipe, they provide loads of tempting aroma and flavours in the dish.
