The Ultimate Triple-Stacked Chicken Tacos | Brisk Whisk Kitchen

📌 Ingredients
For the dough:
Flour - 500 g / 4 cups
Water - 250 ml / 1 cup
Butter (melted) - 50 g / half stick
Baking powder - 1 Tbsp
Salt - 1 tsp
For the meat:
Vegetable oil - 2 Tbsp (for greasing)
Minced meat (chicken used in recipe) - 500 g / 1.1 lbs
Onion - 1 medium
Garlic - 3 cloves
Cherry tomato - 200 g / 1 1/3 cups
Salt - to taste
Turmeric - 1 tsp
Chili flakes - 1 Tbsp
Oregano - 1 tsp
For the salad:
Red onion - 1 medium
Avocado - 1 medium
Tomato - 1 large
Rocket - 30 g / 1 1/4 cups
Lemon (juiced) - one half
Other:
Hard cheese (any type will do) - 200 g / 7 oz
▪️ Instructions
The dough:
1. In a large bowl, mix together water, melted butter, baking powder and salt.
2. Add the flour partially, continuously stirring until the mixture becomes solid enough for kneading.
3. Once the dough is finely kneaded, cover it with a cloth or foil and let it rise for 30 minutes.
4. Divide the dough into five equal parts and roll them out to approximately 5 mm thickness.
5. Heat a non-stick pan to medium-high heat and bake the tortillas on a dry base for 30 seconds per side, immediately removing them from the heat afterwards.
6. Preheat oven to 220°C.
7. Using a baking rack, fold the tortillas inwards and let them hang closely next to each other to help preserve the shape.
8. Place the rack in the oven and bake for 10 minutes.
9. Let cool until the rest of the cooking process is finished.
The meat:
1. Preheat pan to medium-high heat and add the chopped onion.
2. Sear until translucent then add the garlic and mix for 30 seconds.
3. Add the minced meat and let it simmer for a few minutes.
4. Add the cherry tomatoes along with salt, turmeric, chili flakes and oregano, then combine and let simmer until thoroughly cooked.
The salad:
1. Finely chop the red onion, avocado and tomato, then adding them to a separate bowl.
2. Add a handful of rocket and squeeze half a lemon over the salad.
3. Thoroughly mix all of the ingredients together then set aside.
The tacos:
1. Grate any type of hard cheese through a coarser grater.
2. Generously fill each tortilla boat in the order of: meat - cheese - salad.
3. Serve and enjoy!
