One Pan Quick & Easy Tuna Mushroom Pasta | The Frugal Chef

Follow me : Twitter : Facebook : Instagram : Tuna Mushroom Pasta Skillet Serves six 16 oz of pasta of choice - cooked al dente (reserve 1 cup of cooking liquid) 1 tablespoon butter 1/2 tablespoon oil 1 small onion or half a large one -- minced 3 garlic cloves -- minced 8 oz of chopped mushrooms of choice (I used baby Portabella) 4 sprigs thyme leaves 2 - 5 oz cans of tuna in water - drained 1 teaspoon lemon zest juice of 1/2 a large lemon or 1 small one 1/4 cup heavy cream Grated Italian cheese of choice 1 tablespoon chopped parsley Salt & Pepper Add the butter and oil into a pan and melt. Add the onion and cook for 6 to 8 minutes until softened and starting to brown, stirring occasionally. Add the minced garlic, mix and cook for about 2 minutes until fragrant. Add the mushrooms, a little more butter and the thyme. Season with salt & pepper. Brown the mushrooms for about 8 minutes on medium heat. Add the tuna, lemon zest and lemon juice and mix well. Return the cooked pasta to the pan and mix. Add the cooking liquid and the cream. Mix and cook for a couple of minutes. Add the cheese and the parsley. Adjust the salt and pepper and serve.
