Subdivision surface is a modeling technique for making high-resolution models, by manipulating a lower-resolution “cage“ model and using software to subdivide for a smoother surface.
Subdividing increases the number of vertices on the model, making curves more rounded. Usually each subdivision level increases the vertex count 4x the original count.
