Whip Lemon Ricotta Parfait
Ingredients:
1 cup whole milk Ricotta, drained if needed
1 cup organic whipping cream
1 tsp. Vanilla extract
2 - 4 Tbsp. honey
2 Tbsp fresh lemon juice
Pinch of salt
Zest from 1 organic lemon or 2 tsp. of frozen lemon zest
Granola, I used Purely Elizabeth, grain free coconut cashew
Graham crackers for the crumble, I used Mary’s Gone Kookies, Cinnamon flavor
Organic blueberries
Organic strawberries, sliced
Directions:
In a large mixing bowl combine the ricotta, whipping cream, honey, vanilla, salt and lemon juice with a hand mixer on the low setting. Blend until the mixture thickens like whipping cream. Then add the lemon zest and fold it in. If you use the mixture, the zest will get caught up in the beaters and it won’t end up in your cream. Refrigerate for about an hour. It will thicken up due to the ricotta.
To assemble:
Layer some granola into the bottom of your serving dishes and then add the cream. Finish it off with blueberries, strawberries and a sprinkle of the graham cracker crumbles. This is fast, easy and super delicious! Enjoy!
