As per the recipe, add the Shaoxing wine after you add in the cabbage and carrots and continue as per the recipe. In saying this, if you can’t consume alcohol, it can be substituted with regular white vinegar. Peanut Oil - The recipe calls for 2 1/2 Tbsp (50ml) of peanut oil which needs to be divided into 1 1/2 Tbsp (30ml) and 1 Tbsp (20ml) which will be used in two separate parts of the recipe. If you have allergies or concerns over peanut oil, substitute it with and neutral flavoured oil. Garlic - Like I said in the video, this is a quick-cooking dish and can easily burn depending on the preparation of certain ingredients such as garlic. I highly recommend slicing the garlic rather than mincing it. If you do use minced garlic, only stir fr it for 5 seconds before adding the next ingredients. Chinese Egg Noodles - The Chinese egg noodles I used are from a brand called Evergreen La Mein Noodle. They are raw and need to be cooked just as I did in the video. If you are using a store-bought cooked variety, you can skip the initial cooking process and simply run them under some hot water for 1 minute to loosen them up. #noodles #chickennoodles #garlicchillioil
