Cured salmon “Montreal style“ made with UMAi Dry® aging bags
Our Canadian friends at Testek showed us a recipe for cured salmon that is truly awesome. We experimented a bit and showed our results in this video. Here is the recipe for the “Montreal cure“:
500 gr of coarse salt
-500 gr of brown sugar
- 20 gr of spices of your choice (Montreal steak seasoning finely ground)
-sweet ground paprika (enough to cover de filet)
-10 gr of ground black pepper
