My New Favorite Ice Cream Topping - Date Caramel Sauce

Have you read the ingredients on store bought caramel sauce? It’s full of sugar or corn syrup not to mention other ingredients that are not healthy. So today we are making a caramel sauce sweetened with dates which provide us with fiber, potassium, magnesium and vitamin B6dd and a caramel flavor that is natural. We are also not using any dairy. We are using coconut cream for that creamy texture. Pour the hot water over the dates and let them soak for 3 or 4 minutes. This will help soften them. Strain the dates reserving the water for later use. Place the dates into a blender or vitamix and add the coconut cream/milk, the vanilla extract, maple syrup and a pinch of salt. Blend and scrape down the sides of the blender as needed. Add spoonfuls of the reserved water a little at a time until you get the desired consistency. Thicker is better for dips and thinner is better for ice cream toppings.
