One of the easiest sandwiches you will ever make, but when done right, it is one of the most beautiful!
Ingredients (US & METRIC):
Makes 1 sandwich:
3 slices O’Neills smoked back bacon
Knob of butter
1 ripe vine tomatoes, thinly sliced and sprinkled with a pinch of salt
3 spring onions, thinly sliced
¼ head butterhead lettuce, leaves separated
3 tbsp mayonnaise
2 thick slices tartine sourdough
Sea salt & freshly ground black pepper
Melt the butter in a pan over a medium high heat and fry off the bacon.
In a bowl, add the sliced spring onion to the mayonnaise, mixing through. Season with sea salt and freshly ground black pepper.
Once the bacon is fried off, reserve the fat in the pan and toast the bread in the pan.
Assemble the sandwich by spreading the spring onion mayo over both slices of the bread and adding the bacon to the bottom slice. Follow by adding a layer of lettuce, tomatoes and the slice of bread to complete the sandwich.
