Apple Cider (3 hr 15 min.):
INGREDIENTS
10 large apples, quartered
1 orange, halved
4 cinnamon sticks
1 tsp. whole cloves
1 tsp. whole allspice
1 whole nutmeg
1/2 c. packed brown sugar
INSTRUCTIONS
* In a large stockpot over medium heat, add apples, oranges, spices, and brown sugar. Cover with water by at least 2”. Bring to a boil, then reduce heat and simmer, covered, 2 hours.
* Remove orange halves, then use a potato masher or wooden spoon to mash apples. Return to a simmer and let simmer uncovered for 1 hour more.
* Strain through a fine mesh strainer, pressing on solids with a wooden spoon to squeeze all juices out. Discard solids.
* Serve apple cider warm.
Spiked Apple Cider (10 min. with store-bought apple cider or you can follow the above recipe to make homemade apple cider):
INGREDIENTS½ gallon apple cider
2 cinnamon sticks
1 teaspoon whole cloves
1 tablespoon fresh orange juice
1 tablespoon orange zest½ inch grated ginger
¼ cup spiced rum or brandy
INSTRUCTIONS
* Place all of the ingredients except the rum in a saucepan and bring to a boil.
* Let simmer on low for 10 minutes.
* Remove from heat and drain in a fine mesh colander so only the liquid is reserved.
* Stir in rum. Serve warm, Add extra cinnamon sticks as garnish if desired.
