Squeeze the excess whey out of the cheese and heat it to 158 °F. Place the cheese in the hot whey and form two balls. Put them in ice water for 10 minutes, and then in salted water for 2 hours. Store the cheese in the refrigerator in the whey.
Smoked cheese at home🧀.
Ingredients:
-Milk -3 liters.
-Vinegar 9% - 75 milliliters;
-Salt - 200 grams;
-Water -one liter.
Heat the milk to 122 °F and add the vinegar gradually, stirring constantly.
Squeeze the excess whey from the cheese and heat it to 158 °F. Put the cheese in the hot whey, stretch and twist many times. We put the mass into a mold and stabilize the cheese in cold water for 10 minutes. After that we put the cheese in salted water for 1 hour. Smoke the cheese by cold smoking for 10 hours on the fruit sawdust.
Homemade Milk Hard Cheese🧀.
Ingredients:
-Milk cheese - 2 kilograms;
-Milk butter - 200 grams;
-Eggs - 2 pieces;
-Milk - 2 liters;
-Soda - 2 teaspoons;
-Salt.
Put the sour cream cheese in a saucepan and pour the milk.
Heat the milk to 122 °F and strain. To the cheese add salt, eggs and mix well. Then put it on a low heat and add the butter. Stir and add baking soda. After one minute we pour it into a cheese tin greased with oil. Let cool and cut. Enjoy your meal.
