What I cook in a day: as a mom of 2 and full-time YouTuber
Feeding a family can be hard with two picky kids, but these recipes were winners for the whole family! My kids loved the dumplings and the butternut squash melts in your mouth with every bite. Potsticker Recipe:
8 oz ground chicken
1 cup chopped cabbage
3-4 shitake mushrooms, chopped
1 tablespoon ginger
2 cloves garlic
1 tablespoon soy sauce
2 teaspoons sesame oil
1 teaspoon salt
pinch of sugar
In a bowl, mix everything and add to a potsticker wrapper. Steam for 8-10 minutes or pan fry in shallow water for 10 minutes until cooked through and golden brown at the bottom.
Beef Stew Recipe:
1.5 Beef Stew meat (chuck is my preference)
1/2 an onion, chopped
2 cups butternut squash, cut into cubes
1 tomato, chopped
2 celery stalks, chopped
3-4 cups beef broth
1/4 cup flour
salt & pepper
red wine
In a bowl, add the flour with salt and pepper and coat the meat thourougly.
In the Tramontina All in One Plus pan, add oil and cook the meat until browned. Do it in batches so they don’t steam. Transfer to a bowl, then deglaze with the wine, add the vegetables in and saute for 5-8 minutes, pour beef broth and beef back into the pot and simmer for 1.5 - 2 hours until the meat is tender. Add the butternut squash in and cook for another 35 minutes. Serve hot and enjoy!
